Lemon Port Chicken with Goat Cheese

Since Nick comes up with such amazing recipes I thought I should share them with everyone. Nick made this one last Sunday.

Lemon Port Chicken with Goat Cheese
2 to 3 lbs of boneless chicken breast
1/2 lemon sliced thinly
2 tablespoons of fresh Rosemary chopped finely
2 tablespoons of goat cheese
1/2 cup of port wine (or wine of your chose)
Parsley (for garnish)
Salt
Pepper
Olive Oil

1) Sprinkle a generous amount of salt and pepper to chicken
2) Brown both sides of chicken in olive oil
3) Spread goat cheese on top of chicken and place lemon slices and goat cheese on top of chicken
4) Take pan off heat and pour wine on to side of pan.
5)Place chicken in oven at 375 degrees about 40- 45 mins or until cooked
