Weekend Update

We had  very low key weekend. I mean VERY low key. It was so cold and nasty that we just decided to stay in and enjoy our little boy. We did manage to get out Saturday to go grocery shopping. Ha!

Sunday we went to church and afterwards had our new and improved Sunday School class. We are reading Discerning the Voice of God by Priscilla Shirer. So far it is a great book. The book is centered around listening to God when he is speaking to us. Most people can look back on their lives and see how God listened to them at a difficult time. Maybe during that moment you didn’t think he heard you, but he was listening. I am excited for this class and I know Nick and I will grow from it. 001315095_L

In the nursery they said Andrew was so good and the only sounds they heard out of him where happy sounds! Don’t you just loving hearing good things about your child? It makes me so proud!

Well the “weather man” is calling for a chance of more ice this week!! I can deal with ice,but not without power! LOL! I hope everyone has a safe week!

P.S. Please say a prayer for my Grandmother. She is in the hospital from a small heart attack. They were going to run some dye through her,but couldn’t because he kidneys were not functioning right. She is not happy about being there and I can’t blame her.

The sun will come out tomorrow…

I hope so!! Andrew ran a fever Monday night (all night) and was coughing so bad. I stayed home with him Tuesday and took him to the doctor. He said he just has a bad cold and cough and prescribed him some medicine to help the coughing and to help him sleep. I also bought a humidifier and using it for the first time tonight. I have never used one, but I have heard wonderful things. I just worry about the cold air blowing on him!  Anyway he seems okay so far.

Diet Update: 6 lbs down!!! I also worked out 6 times last week!!! I am beginning to like working out, so I hope I keep that attitude.

Tasty Tuesday

Chicken Tostada

Tomatillo Sauce (this can be made ahead of time)
6 or 7 tomatillos
med. onion chopped
2 whole cloves of garlic
1 jalapeno
Broil on a pan with salt till chard. Put everything in to a blender add a little chicken stock (enough to cover the mixture), cilantro (as much as you prefer), and splash of lime juice and blend.

Chicken Topping
1/2 cooked cubed chicken
1/2 can of enchilada sauce
Heat chicken and sauce together in a pan until warm.

Heat Tortillas in oil until firm and brown.
Add your favorite ingredients such as: cheese, sour cream, lettuce, tomatoes, refried beans
Also don't forget the tomatillo sauce on top!

Weekend Update

The weekend got started by going to our usual Friday night Mexican! Nick’s brother was in town also, so we had a crowd. I could tell while eating that Andrew was not in a good mood. It was not until Saturday while shopping that he started coughing. I felt so terrible and we rushed home. He did finally go to sleep, but had a very restless sleep. Needless to say by Sunday morning, after waking up at 4:45 (with little sleep) I was in no shape to go to church. Andrew definitely was in no mood, so we stayed in. As the day went on, Andrew seemed to be feeling a little better. However,  as soon as night fell he was coughing and ill again. I hope we get some sleep tonight!

Personal Day

I took a personal day today because my babysitter’s daughter had surgery Wednesday. So what have I done on my day off? Well not much of anything!! Boring I know!

I did workout for the fifth time this week! Woot Woot!

I also got to hang out with this little stinker!! Andrew is now pulling up on everything and cruising!! He is also finally crawling on all fours. Before he was scooting on his stomach.

Totally off subject, but I have a dilemma! I am planning Andrew’s 1st birthday and wondering if I should have an intimate (family only) party or a party with friends (lots of babies) and family. I would personally love to have a big blow out, but I am also worried that it might be very overwhelming for a one year old. If I invite everyone I want to (and everyone comes) it could be about 40 people. This number sounds so high for a baby to handle. I do know that not everyone will come (even though I would love for EVERYONE to come). So what do you think? The first birthday is so important and I just want it to be fun and memorable. Please give me your input and advice!!!

Healthy Food

Nick is such a wonderful cook and I have defiently been challenging with his cooking style. Now that we are eating more healthy, he has had fun experimenting with different recipes. Of course he does not use recipes! These are all his own creations! These were made last week.

It is hard to tell, but this is not a normal grilled chicken salad. It has  red onion, artichokes, mushrooms, and apples that was marinated in a lemon sauce.  It also had a little goat cheese and on top of a bed of spinach. YuM!

This was “inspired” by a Rachel Ray dish. This is a roasted egg plant that has been hollowed out and roasted. The hollowed eggplant was then cut up and adding with lean ground beef and bread crumbs. on top is some fire roasted tomatoes. On the side is parmesan risotto. Again YUM!

Both dishes took no more than 30 mins. For me it would have taken hours and that is why I don’t cook! Ha!

Diet: Week 3

Before I start I have to correct my last post. I did not mean careless- I meant care less. I guess I was being careless, LOL!


This is week 3 of dieting and exercising. It is definitely easier than it was the first week. I also have room to improve. I do perfect during the week, but when the weekend hits that is not as true. So my goal is not to “fall off the wagon” on the weekends!! I have worked out 4 times both weeks and I hope to add on one more day and make it 5. I have also had only water or Crystal Light since day one! I DO NOT miss caffeine! I have not had one headache since stopping.

I am down 5 lbs. This is not what I was hoping for, but at least I am not gaining! As they say on The Biggest Loser, “The 2nd week is always the hardest.”

Goals for this week and WEEKEND:

Workout 5 times

Only have one splurge meal-not day!LOL!

Drink more water during the day (at work)

Healthy Pasta

Yes you can have pasta and still lose weight!! This was our dinner tonight and it was delicious. I did not cook this, so everything I say may not be that accurate, but I am pretty close.

1) Cook cherry tomatoes, carrots, onions, dried basil & thyme, and olive oil until bursting.

2) In the meantime season chicken tenders (or breast) with any seasoning you choose.DSC02884(rev 0)

3) Grill chicken.

4) Once tomato mixture is ready, puree together.

10/11 months

I am such a bad mommy! I completely thought I wrote about Andrew at 10 months!! As you can tell this will be a two for one. I really can’t believe I forgot.

Here we go:

Weight: Not exactly sure but my guess is 20 to 21 lbs and 29 inches tall.

Clothes: Wears 12 month clothes and  size 2 shoes (he has little feet). I think he will be a size 3 very soon. Hates putting on his coat, but doesn’t mind wearing a hat. I am so ready for spring!

Food: Takes 4 to 5- 7 oz bottles. This is decreasing by the day because he is eating so much table food. He is completely off baby food. He wants nothing but real people food ( I can’t blame him!). For breakfast he always has half a container of yo baby yogurt and half a banana. For lunch and supper he has a array of things. Basically whatever we are eating but just in small pieces. Motor Skills: ALL OVER THE PLACE! He is becoming so mobile and can get anywhere he wants. He is still scooting, but also pulling up and attempting to cruise. He is still not standing on his own, but it will not be much longer.

Sleep: goes to sleep around 7:30-8 and sleeps in his crib till about 11 and then refuses to sleep in it and so he goes to our bed where he sleeps till 6 am. He wakes usually just once and sometimes not at all. He has recently slept till 2 and sometimes 4 in his own crib! Honestly I don’t mind him coming to our bed because I love to snuggle some!

Naps: takes 2 naps (morning and afternoon) and usually sleeps 2 hours each.

Talking: can say mama, dada, no no, nana (banana- and associates the thing with the word), bye bye. He has really began to babble for long periods of time. It sounds like he is speaking his own little language.

Andrew is the sweetest little boy! He definitely is a mama’s boy, and I am okay by that! ;) I have a feeling if we have a girl she will be a daddy’s girl. He gets very whinny when he is tired or hungry, but other than that he is a very mellow baby. He loves to watch Barney or the Wiggles, but that is about it. Also still LOVES bath time. Woot Woot!!

In 5 days I have lost 3 pounds! What to know what sucks? Nick has been dieting also (without working out or cutting near as many calories) and he has lost 6 pounds!!! What? It is so not fair!

Anyway I am truly happy for both of us. I have been doing my plan to the T and working out. I used the pedometer on Monday when I was not at work and I only walked about 1600 steps! I was really lazy that day and didn’t do much of anything. Today when I went back to work I was shocked to look down at the end of the day and  9,429 steps!! I was shocked! My classroom is at the end of a VERY long hall that I have to walk up and down so many times. Plus I am walking around helping students all day. I guess getting my 10,000 steps everyday is not going to be hard at all. I guess I need to bump up the number.

I am glad to be back on my normal schedule. Even though I enjoy laying around with nothing to do, I much rather stay busy all day.

Well I am off to watch the Biggest Loser!!

TV 2010 and Randomness

I am so excited for these shows to come on!! These are my favorite!




I really do watch too much TV and it is just ridiculous. I really am trying not to add any “new” shows to the lineup.

On a completely different subject, I have lost 2 pounds!! In only 3 days I believe that is something to celebrate. I know the weight loss will slow down, but I am happy right now. The hardest thing is not having caffeine. I have a constant headache, but I know that will go away.

Thank for all the tips for finding a pedometer. I found one at Wal-Mart for $7 and it even counts calories that have been burned. I am going to use it today to give me an idea of how much I walk on a normal day. Today is not really normal because I do not go back to work till tomorrow. Speaking of work, I am so not ready to go back!! I love being a teacher, but it will take a few days to get back adjusted to not being around Andrew all day.

I am also starting to workout with ole’ Gilad (FIT TV) again. I am sure he has missed me! LOL!

I can do it, I can do it…

I have to keep saying this in my head because I have begun my weight lose journey and hopefully my last. I want to lose 20lbs as I said before. I have lost 20 pounds before and felt better about myself than I ever had. I didn’t stay there long because I soon got pregnant and gained 40lbs. So after much thought I am going to go about this the same way I did last time. Here is the plan:

Breakfast: Slim Fast granola bar and water

Snack: raw fruit of veg. and water

Lunch: Slim Fast shake,  pretzels or 100 calorie pack, and water

Snack: raw fruit of veg. and water

Dinner: Sensible Dinner (isn’t that what the commercial says?lol!) Basically smaller portions than normally and no bread. Oh yeah and water! BLAH!

This plan doesn’t work for everyone, but it did for me. I hate thinking about what to eat and I hate to cook, having the prepared drink is perfect. I have already done this for 3 days. This has not included dinner because of New Years. The holidays are over and now there is no excuse. Also did you notice NO diet coke or sweet tea. This may be my down fall!! Pray for me!

I am also going to buy a pedometer and walk the suggested 10,000 steps a day. Does anyone know where to buy one?

I plan on reporting weekly about my weight loss, so be looking for updates!!

2010 Resolutions


I hope everyone is having a great New Year! I love making resolutions and there is always something that I can improve on. So here they are in no particular order:

1) Read the Bible: We received our monthly bulletin from church and inside was a plan on how to read the entire Bible in a year. Nick and I are going to do this together.

2) Lose weight: It is so cliché, but I HAVE to. I never thought that almost a year later I would still need to lose baby weight, but here we are. I want to lose 20 and I know I can do it!! More details to come…

3) Get more organized: This goes for work and home. Nick and I made a huge improvement in our home yesterday. We cleaned out our garage and now it is so much better. I hate feeling disorganized, but sometimes it just happens.

4) Be a better mother: I can always be better and I will always strive to do everything better for Andrew. He is the light of my life and I want nothing more than to raise him to be a happy, healthy, and smart boy.

5) Be a better wife: I sometimes find myself putting 100% of my energy into being a mother and not that much into being a wife. This year I will much a conscience effort to improve this.

6) Being a better teacher: I will try to be more patient and remember they are only 10! This one is so hard! I want to improve on my lessons plans.
