2 Meat Pizza Casserole and Saturday Fun

We had a great Saturday. Nick and I managed to get the whole house clean and all the sheets, towels, and clothes washed. Work starts back tomorrow, so I want to make sure everything is caught up.

We stayed true to our menu list and made 3 2 Meat Pizza Casserole and Olive Garden salad dressing. The casserole was YUMMY!!! It was fairly quick and easy to make. I wouldn’t make it during the week,but it was great for a weekend meal. The salad dressing did not taste anything like Olive Garden, but it was still very good.

We ended up with a ton of leftover. We are having some for during the week and then we are going to freeze the rest.

We spent the remainder and cooler part of the day outside. I did a mini photo shoot of my sweet boy and a few critters along the way!

We had a great church service today followed by lunch at my parents. Andrew fell asleep on the way home. I am going to finish a few last minute school things and then it may be nap time for me also!

Pinnable Menu and Cake Batter Rice Krispy Treats

I am still loving me some Pinterest! I have been pinning so many yummy looking recipes and I finally decided to start cooking them. I don’t really enjoy cooking, but if I have a recipe I am good to go!

Nick and I have made weekly menus since we got married. It helps so much when we both get home and are exhausted. The last thing I want to do is think about what we are going to eat. We plan the meals on Saturday or Sunday and then grocery shop. We really try to only buy what we need for those meals plus the essentials (milk and bread). We usually only spend around $75 and we go once a month to buy a lot of meat. So the $75 is without meat and of course we are only feeding 2 people,but we always have tons of leftovers.

Anyway, we decided to develop most of our menu this week from things that I have pinned. I have included the link for reference. I am also going to post the results of the meals during the week.

Menu:

Saturday: 3 Meat Pizza Casserole-without the ham (it just didn’t sound good!) with Salad and Olive Garden dressing! YUM!

Sunday: Chicken Stir Fry, Rice, and Egg Rolls- this is not from Pinterest. It is just a normal meal we cook often.

Monday: (1st day of school! I know I will be exhausted!) Leftovers of 3 Meat Pizza Casserole

Tuesday: Smoked Pork Chops (heated in the oven), canned or frozen veggie, and Loaded Potato Casserole

Wednesday: Crockpot BBQ Chicken, with veggie, and leftover Loaded Potato Casserole

Thursday: Probably leftovers of pork chops or whatever we had a lot of…This is always the day we are too tired and usually end up going to get something eat. We will see…

Friday: We always eat out or have Friday night with friends!

Cake Batter Rice Krispy Treats!!

We got home from the grocery store had lunch and put Andrew down for a nap. Then I decided to go ahead and make these so we could have a little treat throughout the week. I also tried this dessert because I think it would be great for a classroom treat! So here is how it went! The whole cooking process only took about 15 mins. My kind of cooking! It is basically cooking Rice Krispy treats but add yellow cake mix and sprinkles.

Ingredients

You only need a little cake mix, so I save the rest.

Melt Butter…

Add marshmallows….

Sprinkle in cake mix…

Take off the heat! and add sprinkles…

Press into dish and let cool for 30 mins. I forgot to put some sprinkles on top, but I think it has enough!

Long day

Well it is 6:30 am and I am already ready for work! Andrew decided he needed to wake up at 5:30! He is happily watching Dino Dan (his new BFF) and I am doing this because it is too early to leave. HA! Yesterday was our annual Meet the Teacher and it is always a fun, but very long day. I met 19 out of 23 students and they seem very shy and sweet. I know that will only last for the first 10 mins. on Monday (just the shy part hopefully)! Everything went smoothly and I am ready for my 7th year of teaching! It is so crazy that I have been teaching this long. Well TGIF everyone!!!!

Mac and Cheese and Stinky Feet

I have a very picky little eater. He eats very little and tends to graze throughout the day. He doesn’t like to try anything new. I can finally claim him as my own because he is finally eating mac and cheese!!

So on to the stinky feet. I need some advice on Andrew’s stinky feet. I am serious! They are awful! It doesn’t matter what type of shoe. It doesn’t matter if he wears socks or not. I was thinking maybe powder would help, but I don’t know. Any advice? or am I destined to live with a stinky boy? Smile

I am back to the real world tomorrow! It is going to be a LONG day! We have a meeting at 8:00 and then we return to our schools. Meet the teacher is later in the day, but parents come all day, so I will not leave till 7:00pm. YUCK!

Heat Wave

I think almost everyone is experiencing this awful heat wave. We have been in the high 90’s for weeks now and NO rain. However, this heat does not stop this boy from wanting to go outside every evening after supper. He loves every minute of outside time. I am glad I am able to stay in the AC during the day unlike my poor husband who is in it all day long. I have been going to my classroom everyday this week. My room is ready and now I working on lesson plans and copies. Will it ever end? I am enjoying getting to spend time with adults and having some quiet time working before all the chaos begins.

I also went to the eye doctor today for a yearly exam. I was a year late on this exam, so it was much needed. For those of you who don’t know I am BLIND! I have very poor vision. I am now –6.00 on the left and –6.50 on the right. This was close to what I was wearing, but now I find out I have astigmatism! Great! I had no idea. I really didn’t even know what it meant. Well it can cause blurry vision (check! I was starting to experience this) and headaches (check!). The doctor is ordering me toric contact lenses to try. They are more pricey and thicker which mean uncomfortable. I am going to try them and see.

Off to watch 19 Kids and Counting! I honestly LOVE the show and family! Call me crazy!

Get my craft on!

Pinterest is insane! There are so many cute craft ideas and it is almost overwhelming! Instead of just pinning away, I am actually going to attempt some of the craft ideas.

My sister literally just pinned this to me and I am in LOVE. The tray is a casserole dish (Dollar Tree) with spray paint. The buckets and paint circle all have magnets on the bottom. Genius!! Andrew loves to paint, so I am defiantly doing this!

I plan on doing this next week when I am in my classroom. I already have the vase and pencils. Now I just need to do it!

This is a MUST! I have this space in my kitchen that is screaming for this! It is just a picture frame with scrapbook paper. You can write on it with a dry erase marker. Why didn’t I think of that?

I am also planning on doing a little photo shoot of Andrew when he turns 2 1/2 next month. I love these ideas!

Andrew 26-28th months

Well I haven’t updated about Andrew in a while, so here it goes. Despite his age, he is still changing so much. I wish I wrote down more because I know that I am going to forget something.

Clothes: mostly 24 months and a few 2T shirts, but all the pants are loose. He is also wearing size 6 shoes and 4 diaper. This is the same as before. Some 24 months clothes are a little snug, but all 2T clothes are way too big.

Food: Andrew is still a very picky eater, but is getting a little better. He is now eating lasagna and mac and cheese! He still doesn’t eat much at a time, but I know he will make up for it later. He drinks a lot of juice mixed with water during the day, but would rather have milk all the time! I drank milk so much when I was pregnant, so maybe that is the reason! Smile 

Motor Skills: about the same as usual, but has started to pedal his tricycle some. He is also skipping!!

Sleep: He is taking one 2-3 hour nap everyday at around noon.  During the Summer he is going to bed at 9:00 at waking around 7:00. That will unfortunately change when I go back to work next week. We put him down for his naps and bedtime by reading him one story and leaving him to fall asleep on his own. He has been doing this for awhile and loves the stories!

Talking: Where do I begin? He can repeat ANYTHING and says most things very well. He is talking in 5 to 7 word sentences. He remembers everything he hears! He is still counting to 13, and knows part of the alphabet (a-d, h-k, and q-z), recognizes the number 1, his name, and letters A, B, E, O, P, S, and X. He knows the sounds for S, P, and B.

Teeth: No 2 year molars yet! Loves to brush his teeth all by himself and does a pretty good job!

Interest: continues to be all about machines, tractors, and cars. He has also become really interested in blocks, puzzles, and painting.

Potty Training: We attempted this a few weeks ago, but we decided that the time was not right. We are going to try again in a few months.

We fight tantrums and a very strong willed child daily, but that is the course for this age. I know his strong personality will serve him well when he is older. He is of course extremely loving. He tells Nick and I that we are his best friends and that he loves us all the time.

Andrew, thank you so much for being the best son I could ever ask for! You are the light of my life and the joy of my day. I am reminded constantly of how precious this life is by looking at you. May you continue to be head strong, but also let God be the leader!
